- **Budget-Friendly:** Uses ground beef and frozen veggies for maximum convenience.

---

### **Ingredients**

- 1 lb ground beef

- 1 tablespoon sesame oil (or any cooking oil)

- 1 bag (12-16 oz) frozen stir fry vegetables

- 3 cloves garlic, minced

- 1 teaspoon fresh ginger, grated (or ½ teaspoon ground ginger)

- ¼ cup soy sauce (use tamari or coconut aminos for gluten-free)

- 2 tablespoons hoisin sauce (optional for a sweeter flavor)

- 1 tablespoon rice vinegar

- 1 teaspoon sriracha or chili sauce (optional for heat)

- 1 teaspoon cornstarch or arrowroot powder (optional for thickening)

- 2 tablespoons water

- Green onions and sesame seeds (optional for garnish)

---

### **Instructions**

1. **Cook the Ground Beef:**

Heat a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up into small pieces, until browned and fully cooked (5-7 minutes). Drain excess fat and set aside.

2. **Prepare the Vegetables:**

In the same skillet, heat sesame oil. Add the frozen stir fry vegetables and cook for 5-7 minutes, stirring frequently, until tender-crisp.

3. **Make the Sauce:**

In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, ginger, garlic, and sriracha.

4. **Combine Everything:**

Return the cooked ground beef to the skillet. Pour the sauce over the beef and vegetables, stirring to coat. If a thicker sauce is desired, mix cornstarch with water to create a slurry, then stir it into the skillet. Cook for an additional 2 minutes until the sauce thickens.

5. **Serve:**

Garnish with green onions and sesame seeds, if desired. Serve over steamed rice, cauliflower rice, or noodles.
